Recipe: Epcot’s Chocolate Peppermint Cookies

Chocolate Peppermint Cookies

Yields about 2 dozen
½ cup unsalted butter, softened
¼ teaspoon peppermint extract
1 ¼ cups flour
½ teaspoon baking soda
¼ teaspoon baking powder
¾ cup sugar
⅓ cup Dutch cocoa powder
¼ teaspoon salt
1 large egg
⅓ cup semi-sweet chocolate chips
24 peppermint candies, crushed
Preheat the oven to 350ºF.
In a large bowl, cream together the sugar and butter for 1 to 2 minutes (this process helps make the cookies the perfect chewy consistency).
Add the egg and peppermint extract to your large bowl and beat until light and fluffy.
In a different bowl, combine cocoa powder, salt, flour, baking powder, and baking soda.
Gradually, pour the dry ingredients into the wet ingredients and mix well.
Stir in the chocolate chips.
Place batter in the freezer for 10 minutes.
Remove the batter from the freezer and roll dough into balls (about 1 tablespoon each) and place on the cookie sheet 1 ½ inches apart.
Bake for 10 to 12 minutes or until the edges crisp and the center is still slightly soft.
Remove from the oven and immediately sprinkle crushed peppermint candies onto each cookie.
Place on cooling rack and wait until they are cooled to serve.
These cookies were extremely easy to make and didn’t take much time to prepare and bake. Personally, I’m not normally a chocolate peppermint fan, but with a little less peppermint these cookies have become a holiday must-have. They pair wonderfully with a mug of hot chocolate and a Christmas movie marathon. And I definitely did not wait for them to cool down to try. 9/10 Will be making these again
